4 cloves garlic, minced
1/2 cup balsamic vinegar
2 tablespoons honey
3 tablespoons butter or olive oil (divided) 3 cups fresh cranberries
1 apple, peeled and diced into small pieces
4 ounces dried apricots, chopped into small pieces
Salt & pepper to taste . Melt one tablespoon of butter with one tablespoon of olive oil in large skillet over medium heat. Add apples and cook until soft, about five minutes. Add garlic, cook for another minute before adding cranberries and remaining ingredients. Bring mixture to a boil before reducing heat to simmer for 10 minutes uncovered until mixture thickens slightly. Serve over brown rice with kale salad or roasted vegetables on the side for an extra boost of nutrition!
2) One Pan Chicken Zoodles and Broccoli
One Pan Chicken Zoodles and Broccoli is a perfect keto meal that you can make in less than 30 minutes. Ingredients include: coconut oil, red bell pepper, zucchini, brown rice pasta, broccoli florets, salt, freshly ground black pepper and minced garlic. Brown the garlic in the pan with some coconut oil over medium heat before adding in the peppers. Cook for three minutes then add in the rice noodles and broccoli florets. Cover and cook for 15-20 minutes or until the broccoli has reached desired doneness. Season with salt and pepper to taste and enjoy! Bacon & Tomato Egg Cups: A simple dish that consists of ingredients such as bacon, eggs, tomatoes, butter and green onions. Start by cooking the bacon according to your preference (I like mine crispy) before removing it from the pan but leaving about one tablespoon of bacon grease in there. Crack two eggs into each muffin tin cup and season with salt and pepper if desired before topping them off with diced tomatoes and green onions. Bake at 375 degrees Fahrenheit for 10-12 minutes or until eggs are cooked through.
3) Cauliflower Fried Rice
For those of you that don't know, rice is a grain and therefore, is not keto-friendly. Cauliflower rice makes for a great substitute because it still tastes delicious but won't derail your weight loss goals. Here's how to make it: Take one head of cauliflower and steam until tender. Pulse in the food processor until the cauliflower resembles rice grains. Fry 1 tablespoon coconut oil in a large skillet over medium heat until shimmering. Add 3 cups cauliflower rice, 1/2 cup soy sauce, 1 teaspoon ginger paste (or minced fresh ginger), 4 cloves garlic chopped finely or pressed through garlic press), and 2 tablespoons coconut aminos to the pan. Cook, stirring occasionally, until cauliflower is tender. Stir in 1/4 cup green onions and salt to taste.
4) Creamy Spinach and Mushroom Stuffed Chicken Breast
This is a great recipe because it has lots of flavor, as well as being super easy to make. All you need to do is toss all the ingredients in a bowl and bake. The most time-consuming part of this recipe is waiting for it to cook so that you can enjoy a delicious, hearty meal. This meal features high-quality chicken breasts (the protein and healthy fats help with weight loss), which are high in protein and low in carbs. Cream cheese makes up most of the fat content, but what we really like about this dish is how rich and flavorful it tastes. With that said, if you're feeling decadent or want something more on the lighter side, feel free to use a lower-fat cream cheese substitute or leave out some of the cheese altogether.
